BOURGOGNE ALIGOTÉ

Aligote grape.

More acidic than the Chardonnay, it is ideal for an aperitif. Is eaten plain or with cassis cream of Burgundy

 

BOURGOGNE CÔTE CHALONNAISE BLANC

Produced in clayey limestone ground, the vines have about twenty years. We practice sustainable farming in treatment. Harvesting is done by machine and the fermentation takes about three weeks with a system of thermoregulation at about 20 °C

The bottling is done by us to the field with a moderate filter. This wine is very fruity with a good balance. It is drunk on delicatessen or fish sauce.

 

BOURGOGNE CÔTE CHALONNAISE ROUGE

Produced on the Mount Avril in the clayey limestone, facing south. Mechanical and manual harvesting. Traditional vinification with maceration average 12 days with thermal regulation. 2 vintages: one in cement vats for 12 months, one in oak for 15 months.

This fruity wine can be drank with all meats (red, poultry, meat in sauce, game) and cheese. Aging about 7 to 10 years.

 

GIVRY BLANC

Forty years vines ; silty clay soil, North East exposure. Hand harvested, pneumatic press, traditional vinification with temperature control, fermentation about three weeks.

Matured in vats enamelled steel and 20% in oak barrels. Aging about 5 to 8 years. Eat with fish and delicatessen.

 

GIVRY VILLAGE ROUGE

Clayey silt soil, North East exposure. Manual harvest. Traditional winemaking, aged in barrels of cement, with an average of 10 days fermentation.

Fruity (red fruits), it is eaten with meat (red, poultry, meat in sauce, game) and cheese.

 

GIVRY ROUGE 1er CRU LA GRANDE BERGE

Clayey limestone soil on Jurassic, Southeast exposure. Hand harvested, and traditional vinification with temperature control and a vat of at least 12 to 14 days. Aging in cement tanks and part in oak (15 months) which gives this wine great finesse a slight vanilla taste.

Wine with finesse, with delicate aromas of red fruits and kirsch; often rewarded in Macon. It is best enjoyed with red meats, poultry, but also with cheese. Ageing: 10 to 15 years depending on the vintage.
